Can someone explain to a relative newbie what's the advantage of tubeless tyres vs. tubes? Also am I right to assume that if you get a puncture with a tubeless tyre your up the proverbial creek?

Majority of punctures you'l get whilst MTBing are pinch flats/snake bites. Running tubeless systems eliminates this problem. If you do flat using tubleless you can easily remove the valve stem from a tubeless wheel and insert a standard tube.
There are many other benefits to the tubeless system such as the ability to run low pressures and the how the tyre responds to the terrain but dont worry about this.

So Modena here is the scoop.
Tubeless allow to you run lower pressures without the risk of pinch flats with tubes. Far, far fewer punctures overall, but choose tyres wisely as some are far more puncture resistant than others. Lower pressures also mean better traction pretty much on everything. The also roll better and feel more responsive when you accelerate. Set up with some light rims (ZTR) and the difference is remarkable.
If you do puncture with tubeless and the goo does not seal the hole you have a couple of options.
Plug the hole if small enough with a rubber plugger yoke, the ones motorcyclist use...
or...
Whip out your spare tube, remove the valve from the rim and insert the new tube.
The only hassle is some rim/tyre combinations work better than others and they can be a pain to set up, goo, soap, sometimes a compressor, etc.
But when set up right you may only have to go near them again when the tyre is bald.
